Week of Oct. 5 - 9

Foods I Classes - 1st, 3rd & 4th Periods

We will be working on both Obj. 6 (Baking) and Obj. 2 (Nutrition) this week.  Labs this week will be Monday (Crumb Cake) and Thursday (Variety Muffins).  I will give a muffin demonstration on Tuesday.  Between labs we will review some baking cooking terms and baking food science as well as recipe math.  We will also do an activity sheet on comparison pricing of biscuit products.  Towards the end of the week we will start learning about the Food Pyramid.  (An extra credit assignment will be announced on Friday.)

Week of Oct. 12 - 16

Foods I Classes - 1st, 3rd & 4th Period

We will continue our work on both Obj. 6 and Obj. 2 this week.  We will finish up the Obj. 2 unit covering the "My Pyramid" on Monday.  We will start learning about cookies on Tuesday.  I will give a demonstration on brownies (bar cookie) on Wednesday.   On Thursday class groups will mix up and bake four different kinds of cookies, Oatmeal Raisin and Chocolate Chip (both drop cookies) and Peanut Butter and Snickerdoodles (both molded cookies).  We will wait to taste them on Friday when we will also make punch to drink with them.

Extra Credit due by Wed., Oct. 14.  Go to mypyramid.gov.  Select to make a personalized plan.  Enter requested information.  Print out a copy of your personalized plan, write your name on it and turn it in.  Worth 5 extra credit points. 

Week of Oct. 19 & 20

Foods I Classes - 1st, 3rd & 4th Periods

This short week we will be reviewing Objectives 1,3,4,5, 2.02 and 6.01.  Students will take a Midterm Assessment over those concepts on Tues., Oct. 20.  Students will also complete the Cakes Brochure assignment.

Week of Oct. 26 -Oct. 30

Foods I Classes - 1st, 3rd & 4th Periods

This week we will finish Objective 6.  I will give a foam cake  (angel food) demonstration on Monday and students will plan for a shortened cake lab.  On Tuesday, students will mix and bake the chocolate cake and taste the angel food cake.  On Wednesday, students will make vanilla frosting for their cakes and sweet tea.  Cakes will be eaten and evaluated that day.  We will review all parts of Objective 6 (principles of baking science and preparation of biscuits, muffins, cookies and cakes) and take a test on Friday.  We will also start on Objective 7.01 - Grains.

 

Week of Nov. 2-6

Foods I Classes - 1st, 3rd & 4th Periods

The focus this week is on Objective 7.01 - Grains.  We will be learning about the parts of grains and how they are processed.  We will also learn about preparing grain products such as rice and pasta.  The cooking lab will be on Wednesday.  We will make Herbed Rice Pilaf and Homemade Macaroni & Cheese.  Later in the week we will start on Obj. 2.01 in which we will learn about specific nutrients, their functions and sources.

Guest Demonstrator next Tuesday, Nov. 10, from Johnson & Wales University Culinary School in Charlotte.

Week of Nov. 9-13

Foods I - Per. 1st, 3rd and 4th

On Monday we will review Obj. 7.01 - Grains to prepare for a test on Thursday.  We will also continue learning about specific nutrients.  The guest demonstrator from Johnson & Wales University Culinary School in Charlotte will be in class on Tuesday.  Later in the week we will complete our study of nutrients and review for a test that will be early next week.  We will also start Obj. 7.02 & 7.03 - Fruits and Vegetables.
